SERVES 4-6
INGREDIENTS
- 1 large cucumber
- 2 garlic cloves
- 500gml full cream greek yoghurt
- 2 tbs chopped dill
- 2 tbs olive oil
- 1 tsp white wine vinegar
- Salt and black pepper
Method
- Peel the skin off the cucumber. Then coarsley grate the cucumber. Pile it into the centre of a clean dish towel and squeeze out the excess liquid.
- Put the yoghurt in a bowl and stir in the cucumber, crushed garlic, chopped dill, oliveoil and salt and black pepper and wine vinegar – mix to combine.
- Garnish with dill.
