SERVES 4-6

INGREDIENTS

  • 1 large cucumber
  • 2 garlic cloves
  • 500gml full cream greek yoghurt
  • 2 tbs chopped dill
  • 2 tbs olive oil
  • 1 tsp white wine vinegar
  • Salt and black pepper

Method

  1. Peel the skin off the cucumber. Then coarsley grate the cucumber. Pile it into the centre of a clean dish towel and squeeze out the excess liquid.
  2. Put the yoghurt in a bowl and stir in the cucumber, crushed garlic, chopped dill, oliveoil and salt and black pepper and wine vinegar – mix to combine.
  3. Garnish with dill.
